You can get good shots by switching your phone to silent with volume down - headphone jack in for insurance. Pull up the video cam from the lock screen and operate with the volume buttons. Click the menu or power button to close back to lock screen.
If you pull it up ahead of time then have the screen against your body, they won't expect anything, just keep it by your leg or pocket or somewhere natural to hold

Or if you have the phone up using it prior, same thing. Just silently switch, keep them in the cams peripheral instead of straight on
