Never been to Dante's but the pool party is pretty popular.
Fat Tuesdays attracts a younger crowd. They remove the stools later in the week because these drunken kids start fighting and use them as weapons. We avoid the place.
Capt. Tony's has a more age mixed crowd, with more controlled craziness. You'll probably see more skin here than at other bars (except the Garden of Eden - the nude bar on the roof of the Bull)
Best parties are Kelly's (Mon), 801 (Wed) and Bourbon St Pub (Thurs).
I recommend you bring some costumes (check the web site for the nightly themes), and get into the party, instead of wearing tourist clothes. You'll find it easier to meet people.
