I've seen programs out there that will take any photo and make it look like a Polaroid. But, there's a quality and coloration in many of the old Polaroid color photos that are a dead-giveaway. B&W probably a little more difficult, but there can be clues in those, too. Why someone would want to go the trouble of doing that just doesn't make sense to me.
