Just to add a note to Graynsam's post - if the police do catch you performing on the beach, yes, the fines can be hefty - but you could also be summoned to appear in court. And that could be some months later - in other words, after you've gone home, and that could mean having to come all the way back! If you don't appear, you risk arrest the next time you arrive in France - and that escalates the problem enormously, a huge increase in the fine and/or prison! So be very, very careful!! Fortunately there's a kind of camararderie among the beach users, so if the police do arrive, an "early warning system" usually alerts everyone.
Whatever, the risk doesn't seem to deter most people, so there's still plenty of activity. Have fun!
