When stored private messages exceed 50..
..does the oldest pm get bumped off with each new one?
or
.. you don't receive anymore until you delete some?

Your old messages do not automatically get deleted.

If you are at your limit, people will see a message that says your PM mailbox is full and the new PM won't be delivered or stored anywhere.
