Have come across a number of these clips where a Japanese bikini girl has all or part of her swimsuit pulled off/down by a man who sneaks up on her. These girls are clearly aware they are being filmed but I wonder to what extent they know what is going to happen. For a woman to have her clothing torn off by a strange man could be a very frightening experience. Not something I would wish on any woman. However this does not appear to be the case here.

Is the general consensus that these are staged events with professional models? or is this supposed to be real. (always seemed staged to me......)

These videos are staged but there are some early Shuri Sharking videos called " Skirts up panties down" and "runaways" that are legit. Nanpa has some of them on his site.
