I use "Simple Notebook". u can set it too turn off sounds and make the screen black.
you can set up a hidden folder so if caught photos don't show up in your gallery.

I don't have a droid but I hear they have good stealth one where it looks like the screen is black and it snaps photos automatically. Mine looks like another app while I'm on the phone.
